From revered cult winemaker Fred Savart, L’Ouverture is a Blanc de Noirs, made from 100% Pinot Noir grown on sandy soils in the village of Ecueil that are designated Premier Cru. Comprised of around 45% reserve wine made up of three consecutive vintages with some taille (second press) included and 55% from the base vintage of 2022. Half is fermented in mostly neutral barrel with the other half in stainless steel and the wine sees partial malolactic fermentation to impart some creaminess while maintaining brisk acidity. Bottled with a very low dosage of around 2.5 grams per liter, this is an Extra Brut with crisp, clean orchard fruit aromas and flavors as well as a hint of wild berry and toasty brioche. Pairs wonderfully with oysters on the half shell or a deep, rich dark chocolate ganache!
