As one of the most sought-after growers in the Montagne de Reims, Fred Savart farms just four hectares split between Écueil and its neighboring villages. For this cuvee, he blends his own Chardonnay from clay-and-loam Écueil with fruit bought from the Carré family in chalkier Trépail, a village he discovered after tasting Raphaël Bérêche's vins clairs from the same vines, and whose firmer, more muscular character he finds nicely complements Écueil's softer, more delicate one. The two terroirs are vinified separately, blended in stainless steel, and aged entirely in barrel; this release is an even split of the two, built almost entirely from the 2023 harvest and finished at a bone-dry 1.6 g/L dosage. On the nose, apricot, passion fruit, orange peel and a touch of spice give it an exotic lift. The palate is mainly chalky with bright acidity, complemented by a soft, broad undertone. Try it with oysters and mignonette, or grilled unagi with a squeeze of yuzu.
