CloseKnown colloquially as Dobadaan in Zapotec, Maguey Mexicano from the revered Rhodacantha species, is one of the most versatile and mysterious agave varieties. It is believed there are at least seven different sub-varieties — such as penca larga, penca corta, liso, chontalo amarillo grande — each with its own traits that yield singular and surprising mezcals. Mexicano grows in pine-oak forests and dry tropical woodlands between 1,000 and 2,500 meters above sea level. From Sonora to Oaxaca, it often appears alone on mountain slopes, where shallow, organic-rich soils give it the strength to reach an imposing size. At Grulani, they honor it with respect, highlighting its green, generous power. On the nose, Epazote, a Mexican tea and fresh rue, gentle spices and a broad, green, balanced palate. Great for pairings with herbs, vegetables, and moles as well as an excellent educational tool to exemplify genetic diversity in agave.
