CloseThe Rossignol family has cultivated vineyards in Cote de Nuits since the 16th century. Today, brothers Nicolas and David Rossignol carry on this legacy in their certified organic and biodynamic vineyards. This Pinot Noir is the result of the vines from their Les Crais, Jouise and Villages plots, with an average age around sixty years. The grapes are hand-harvested and vinified separately. Then blended before fermentation in aged French oak barrels. Savory earthen notes blend with fragrant cherry, bramble fruit, and leather on the nose. Muscular, weighted on the mid-palate with ripe dark fruit, cedar, sous-bois, black pepper, and mint are flecked with mineral notes. Overall, Rossignol has made a delectable dry Pinot with generous, balanced acidity and a lingering finish. Pair with mushroom walnut bolognese or Yakitori skewers with plum and shiso
