It looks like a rosé, kind of smells like a rosé, has a pink label with a rose image but it's not a rosé. Bombisch is a crushable, dynamic blend of only white grapes - 60% Gewurztraminer, 30% Pinot Gris, 10% Riesling, that spends an extended time on the skins, thus the salmon, copper color reminiscent of a rosé but the classification as an orange wine. From biodynamically-farmed vineyards with diverse soil types, the bunches are harvested by hand and fermented spontaneously in old foudres and bottled unfined, unfiltered and with no added sulfur. Fruity, salty and tangy with with lychee, rose petal and mandarin peel aromas and flavors, it's a savory, intense, medium-bodied wine with dry tannins that begs intense foods like a spicy Thai Basil Duck, paté, or a soft, stinky cheese like Pont l'Évêque from Normandy.
