2024 Oyster River Morphos Pet Nat - Warren, Maine (750ml) - $22
Oyster River Winegrowers are a small, organic, low-intervention Farm, Winery and Ciderhouse on Maine’s rugged North Atlantic Coast, about 70 miles northeast of Portland. Morphos is a sparkling blend of 50% Cayuga and 50% Seyval Blanc, two hybrids that are commonly planted in cooler climates. While Seyval’s parentage is half vinifera, Cayuga’s is entirely vitis labrusca, native to the Northeast, perfectly suited for the climate and naturally resistant to rot, pest and disease. Bottled during the end of active fermentation, it continues to ferment in bottle resulting in a dry, cloudy, yeasty and naturally effervescent PetNat. It’s light-to-medium-bodied with balanced acidity, restrained stone and orchard fruit flavors, and subtle fermentation notes. Pairs perfectly with oysters, clams or mushroom tacos.

2025 Rezabal Txakoli Rose Hondarrabi Beltza - Basque Country, Spain (750ml) - $24
Rezabal is a family-owned winery located in Zarautz, between Getaria and San Sebastian along Basque Country’s Atlantic coast. Cool sea breezes and high trellising inhibit mildew and fungus contributing to ideal growing conditions for sustainable farming. Their Rosado is made from 100% Hondarrabi-Beltza, a unique, indigenous Basque red grape, from 30 year old vines planted in sandy soils with some clay. Harvested by hand, the grapes are fermented without their skins in temperature-controlled stainless steel tank with native yeast. Near the end of fermentation, the tanks are closed to retain natural carbon and kept chilled until bottling, which gives the wine its subtle effervescence. Crisp, clean and dry with aromas and flavors of wild green strawberries and pink grapefruit with subtle floral and mineral notes. This lively rosé should be poured from a decent height to agitate the bubbles. It’s the perfect pairing for Pintxos, Basque Tapas like Gilda, a simple toothpick skewer with a green Manzanilla olive, a salty Cantabrian anchovy fillet, and a spicy, pickled Basque Guindilla pepper, or a Jamon and Manchego on Focaccia sandwich!

2023 El Piraña Tarbissana Palomino - Andalucia, Spain (750ml) - $32
Tarbissana is made from 100% Palomino Fino, the grape used in virtually all Fino Sherry, but without fortification, thus the modest abv of 11.5%. The vines, averaging 35 years old, are from parcels across the estate’s 4 hectares on lustrillo Albariza soils that have been farmed organically since the 1990's though they didn't start making their own wine until the 2022 vintage. Harvested by hand and direct pressed into 80% stainless steel tank and 20% into old bota the juice is fermented with native yeast and without temperature control, then rests in the same vessels for an additional 8 months before bottling without fining or filtration. Despite the lack of fortification, it has a the distinct saline, orange peel, nutty and tangy notes that are a hallmark of Fino Sherries. Medium-bodied with moderate acidity, this stunning, unique wine pairs well with hard, aged cheeses, anchovies, olives and pata negra, the dry-cured ham that comes from pure-bred black Iberian pigs that roam freely in oak forests and spend their final months on a strict diet of acorns (bellotas)

2024 Domaine des Terres Promises 'A Ma Guise' - Provence, France (750ml) - $25
A Ma Guise, which loosely translates to 'as I wish', is an iconoclastic field blend by Jean-Christophe Comor, a former political advisor, teach and author who left Paris for Provence and embarked on a career in wine. The blend consists of Clairette Blanche, Rose and Verte; Carignan Blanc et Noir; Mourvedre Noir, Gris et Blanc; Grenache Noir, Counoise, Cinsault, Vermentino, Roussanne, Muscat a Petits Grains, Macabeu, Syrah, Ugni Blanc, Biancu Gentil and Csomor (an obscure Hungarian varietal apparently named after Comor's grandfather - really?!). Farmed organically and harvested by hand, this rustic, medium+ bodied, slightly barnyardy red with wild black raspberry notes and a firm, dry finish pairs perfectly with roast chicken, Swiss cheese burgers or lentil stew.
