2025 Julie & Toby Bainbridge Cuvee l'Acrobate - Loire Valley, France (750ml) - $24
Toby met Julie on a farm in Protection, Kansas, before moving to France, where he became the winemaker at Domaine Mosse. Later, they leased and purchased small parcels to start Julie & Toby Bainbridge in 2012. They use crown caps for all their bottlings due to their partnership with big Champagne houses, recycling empty bottles used for élevage. Cuvée l’Acrobate is made from Grolleau grown in iron- and calcium- rich, sandy soils. The grapes are hand- picked and de-stemmed before undergoing a three-day maceration. The juice is direct-pressed into fiberglass/stainless steel tanks and ages for 6 months. Though it is classified as an effervescent rosé, we decided to place it with our Pét Nat’s because it’s intriguing and fun, keeping you wanting more. A light, bright and crisp wine with notes of white cherry and cranberry, balanced by a little tartness. Perfectly paired with country-style pâté with cornichons, chilled shrimp with a squeeze of lemon, or a rustic burrata-basil pizza.
2025 Cacique Maravilla Moscatel de Alejandria Naranja - Bío-Bío Valley, Chile (750ml) - $22
Manuel Moraga Gutierrez, seventh generation winemaker at Cacique Maravilla in Chile's Bío-Bío Valley, tends his family’s volcanic vineyards that date back to 1776. Cuveé Naranja is their flagship orange wine made from hand-harvested, dry-farmed Moscatel de Alejandria, of which about 30% is affected by botrytis. The grapes macerate on their skins for two months in open-top concrete vats without punch-downs or pump-overs. Unfined and unfiltered, this lively skin contact white is fresh and tropical with notes of guava, citrus peel and a subtle but prevalent tannic grip. Pairs perfectly with grilled octopus with charred lemon and herbs or coconut-based Thai/Indian vegetable curries but can also stand up to a pork loin glazed with fruit compotes.
2024 Gullyview Estate Riesling - Clare Valley, Australia (750ml) - $24
Jono Koerner grew up on his family’s vineyards and founded Koerner Estate with his brother in 2014 before setting off on his own with his partner Megan Jenkins, to launch Gullyview Estate in 2023. Located in the Southern Clare Valley which is know for producing world class Riesling, the vineyards are downwind from the Spencer Gulf and benefit from breezy warm days and cool nights - a diurnal temperature shift that’s ideal for precise, acid-driven wines with great purity of fruit while also lowering disease pressure. The vines are planted on Terra Rossa, red clay over limestone soils, destemmed and crushed prior to fermentation in stainless steel and aging on the fine lees for an additional five months. The result is a pale, golden hued, puckery white with Riesling’s telltale petrol aromas that are reminiscent of walking into a bike shop and getting a whiff of fresh tires. Trust us - it’s desirable once you get accustomed to it. Bone dry and medium-bodied, the palate opens up with beautiful poached pear and grilled peach flavors. Pairs perfectly with a spicy shrimp ceviche or mango chicken chutney.
2020 SRC Rosso Rivaggi - Etna, Sicily, Italy (750ml) - $36
SRC is an acronym for the family behind this prestigious winery in Mt. Etna, Sicily. Sandra, Rori, and Cinzia are a father, mother, daughter team with Rori being the lead vigneron. Their vineyards range from 650m to 1000m above sea level all over the North slopes of Mt. Etna with vines ranging from 50 to 120 years old. This red blend of about 80% Nerello Mascalese and 20% Grenache rooted in volcanic soils is hand harvested before being co-macerated and co-fermented for about 3 weeks in stainless steel before seeing elevage in steel tanks and tonneau for about 8-10 months. They are then bottled unfined, unfiltered with less than 10ppm of sulfur for stability before they are set to rest in bottle for a year before release. The result is a gorgeous garnet hued wine with medium body and tannins, bright acidity, and aromas of wild barnyard and ripe red fruit enveloped in flavors of black cherry, strawberry, raspberry, plum, leather, and lovely, earthy minerality. Pairs delectably with Sicilian eggplant parmesan or any type of Arancini.
