CloseToby, from Shakespeare’s home town of Stratford-upon-Avon, drove a tractor on Julie’s parents' farm in Protection, Kansas, and left with the farmer’s daughter. They moved to France, where he worked and studied under the legendary René Mosse before launching their own winery in 2012. L’Acrobate is made from Grolleau grown in iron- and calcium-rich, sandy soils. The grapes are hand-picked and de-stemmed before undergoing a three-day maceration. The juice is direct-pressed into fiberglass/stainless steel tank, fermented spontaneously, and aged for 6 months on the lees before bottling in recycled Champagne bottles, thus the crown cap. Though most consider it a rosé, we found it just effervescent enough to include in our PetNat section. Intriguing and fun, it’s light, bright and crisp with notes of white cherry and tart, crunchy cranberry. Low in tannin, serve chilled and pair with Pâté de Campagne and cornichons, chilled shrimp with a squeeze of lemon, or a rustic burrata-basil pizza.
