CloseManuel Moraga Gutierrez, seventh generation winemaker at Cacique Maravilla in Chile's Bío-Bío Valley, tends his family’s volcanic vineyards that date back to 1776. Chacoli Negro is a deep, dark and delicious blend of 50% Cabernet Sauvignon and 50% Malbec that's hand-harvested, de-stemmed and macerated on the skins for 4 days before undergoing spontaneous fermentation with indigenous yeasts in fiberglass tank. Fermentation is completed in bottle without fining, filtration or disgorging resulting in a natural and naturally fizzy red that kind of blows Lambrusco away. Medium-bodied and juicy with fresh, ripe blackberry and plum flavors, balanced acidity and a dry, lightly tannic finish, this PetNat is perfect with crispy Empanadas, mushroom Arancini or a Manchego cheeseburger.
