Tentations is the 2nd label and more classic version of Provençal rosé from the legendary, historic Clos Cibonne which dates back to 1797 and is named for Jean-Baptiste de Cibon, a captain in the French Royal Navy who served under Marquis de Lafayette in the American Revolution. It’s a blend of 50% Grenache, 20% Cinsault and 15% Syrah all sourced from practicing organic, neighboring farmers with longstanding relationships plus 15% young vines of Tibouren, a rare, ancient grape that’s is Clos Cibonne’s calling card. The wine is fermented at cool temperatures in stainless steel and aged on the lees for two months before bottling. The result is a refreshing rosé with restrained pink grapefruit, lemon and red berry flavors, subtle herbaceousness and a streak of salinity and minerality that carries into a crisp, clean finish. Pairs well with Moroccan Couscous, Ratatouille, or a seasonal fruit salad with crumbly feta and fresh mint.
