CloseProduced from a minuscule 0.4 hectare vineyard, Rovellotti’s Vespolina, is an excellent portrait of this lesser known, indigenous Piedmontese varietal. Sustainably farmed, it's then vinified in stainless after an 8 day maceration, and aged in a mosaic of tiny underground cellars stacked high with decades-old botti, spread around Ghemme's Ricetto, a 10th-century central walled compound that protected the townsfolk during times of strife and war. Light-to medium-bodied yet robust, it exhibits firm, dry tannins and fresh acidity that frame a spectrum of flavors from brambly berries, cherry and pomegranate to rose petal and herbs with a hint of tobacco. Chill if you prefer and pair with roasted pork chops and creamed spinach or a hearty vegetarian dish like lentils with chargrilled eggplant and thyme.
