Souhaut is a revered natural winemaker in the Northern Rhone and Ardeche. His Blanc is a blend of 60% Viognier and 40% Roussanne that's hand-harvested and directly pressed. The wine is fermented in wooden tank and aged on fine lees in second-hand oak casks for eight months and bottled unfined and unfiltered with just tiny bit of SO2 depending on the vintage for stability. It’s a vibrant wine with a golden hue and enticing aromas of white flowers, tropical fruit, and wet stones. The palate is complex yet supple with pear, citrus and fresh fig flavors that are backed by grippy minerality, balanced acidity and a hint of salinity. Savory and compelling, it pairs well with root vegetables, monkfish or even a seafood curry with ginger, garlic and coconut milk.
