Chicotona is the revived mezcal brand of Maestro Mezcalero, Don Lauro. Originally founded in 1962, it went dormant after Don Lauro’s passing in the early 2000s until its reemergence in 2023 at the hands of his grandson, and Fort Greene neighbor, Daniel - and wife, Lauren. Named after the snake found in the agave fields of Guerrero, Chicotona has found a new home in the revival: now proudly produced at the hands of a Maestra Mezcalera in the state of Puebla which accounts for only 3% of the total Mezcal production, yet has its own rich history of Agave distillation. 
 
Agave Potatorum, referred to as Papalometl in the region, is an Agave species found across Puebla and Oaxaca (more commonly referred to as Tobala in Oaxaca). In Puebla, the volcanic terroir gives it higher notes of minerality. As a species, it takes over 13 years to mature before it can be harvested, allowing it to take on the characteristic of the land and fully develop its own taste. Once harvested, it is distilled in steel and copper stills, using recycled water and zero additives. The first sip offers notes of grilled bell pepper and ground white pepper then deepens with umami-rich, pungent flavors reminiscent of sautéed shiitake. It finishes with dry earth, a twist of grapefruit, and subtle floral aromas.
