CloseJean Touitou’s journey to create things that are missing from the world led to the founding in 1987 of the revered Parisian brand A.P.C. (Atelier de Production et de Création), and more recently took a turn towards wine after a chance encounter with Jean Boujnah, one of the largest winemakers in his native Tunisia. Already a devotee of natural wine, Touitou was thrilled to discover that Boujnah had a single unsprayed parcel of old-vine Muscat d'Alexandrie, which launched their collaboration. The vines are grown in sandy limestone soil, harvested by hand, vinified with minimal intervention and bottled with zero added SO2. The result is a floral, saline, and distinctly Mediterranean white with enticing tropical notes of honeysuckle, pineapple, apricot and salted caramel. Medium-to-full bodied with a silky, slightly viscous texture, and deceptively balanced acidity, it’s like an old pair of A.P.C. jeans, it's simple, well-crafted and cherished. We recommend pairing it with Mediterranean cuisine like a seafood Tajine or simply enjoying as an aperitif.
