Ak Zanj, which translates to ‘With Angels’ in Creole, is a reference to the thirsty angels who pilfer the evaporated spirit. Made from a low-yield sugarcane varietal named ‘Madame Mueze’ which is sourced locally, then blended, fermented, distilled and aged in Port-au-Prince. The cane undergoes spontaneous fermentation before it is distilled in a 60-plus-year-old Creole Column and aged for 3–7 years in casks previously used for Cognac. The spirit balances sweetness and spice with hints of honey and candied fruit matched with cinnamon and woodsy hazelnut.
