Rezabal is a family-owned winery located in Zarautz, between Getaria and San Sebastian along Basque Country’s Atlantic coast. Cool sea breezes and high trellising inhibit mildew and fungus contributing to ideal growing conditions for sustainable farming. Their Rosado is made from 100% Hondarrabi-Beltza, a unique, indigenous Basque red grape, from 30 year old vines planted in sandy soils with some clay. Harvested by hand, the grapes are fermented without their skins in temperature-controlled stainless steel tank with native yeast. Near the end of fermentation, the tanks are closed to retain natural carbon and kept chilled until bottling, which gives the wine its subtle effervescence. Crisp, clean and dry with aromas and flavors of wild green strawberries and pink grapefruit with subtle floral and mineral notes. This lively rosé should be poured from a decent height to agitate the bubbles. It’s the perfect pairing for Pintxos, Basque Tapas like Gilda, a simple toothpick skewer with a green Manzanilla olive, a salty Cantabrian anchovy fillet, and a spicy, pickled Basque Guindilla pepper, or a Jamon and Manchego on Focaccia sandwich!
