Quinta do Ermízio, is a small, 15 hectare estate located in northern Portugal between the Douro and Minho rivers, not far from the Atlantic. Their Vinho Verde is a classic blend of Loureiro and Trajadura, from vines that are cultivated in the traditional pergola system and farmed with limited interventions and abundant cover crops. The soils are granitic and elevation is around 500 meters. The grapes are harvested by hand, pressed, and fermented with native yeast in stainless steel tank at a cool 18°C to maintain freshness. After fermentation, malolactic conversion is blocked to maintain higher acid levels then it’s lightly filtered with a small addition of sulfur and CO2 before bottling. Crisp, lively, and gently effervescent, Ermizio has beautiful stone fruit and floral aromatics followed by flavors of grapefruit, lime and melon with granite minerality on the palate. At just 11.5%abv, this light-bodied, pleasurable white is ideal for fish tacos, a Caesar salad with fresh parmesan and anchovies, or a hard, salty cheese.
