CloseLocated along the western coast of South Africa, Noble Hill’s vineyards sit among wild olives, native forest, and carefully preserved Renosterveld, literally 'Rhinoceros Field in Afrikaans, a critically endangered shrubland vegetation in the Cape Floral Region. Their wines are made with a light touch and dedication to preserving the natural character of the estate. Their Rosé is 100% Mourvedre, grown on granite and clay soils, that spends a few hours on its skins before it's pressed. Fermented in stainless steel tank, it's a Provençal style rose that carries aromas and flavors of strawberry, watermelon, and cranberry with a crisp, focused finish. It's dry, light to medium-bodied, with moderate acidity and a salty, mineral note on the finish. A perfect pairing alongside Snoek Pate (from a local variety of Mackerel), Salade Niçoise, or a simple side of green and black olives.
