This sparkling Pet-Nat, by Bojan Kobal in the steep Haloze Hills of Štajerska, Slovenia sources it’s grapes from organically farmed Yellow Muscat vines grown in sand, clay, and marl soils. Hand-harvested and fermented naturally, the juice is bottled before fermentation is completed, allowing native wild microflora to finish the job in the bottle. The result is a naturally bubbly, unfiltered wine that is lively, rounded, and juicy! It is wonderfully aromatic, yet super refreshing, showing distinct notes of lemon, apricot, spring flowers, and pink grapefruit. A perfect pairing for Indian curries, spicy Thai dishes, or savory grilled pork.
