CloseKobal Bajta is a unique and refreshing pét-nat made from Blaufränkisch, an indigenous Eastern European varietal. The grapes are naturally and sustainably dry-farmed on the steep, wind-swept slopes of Sajerska, an ancient wine region dating back at least 2000 years. Harvested by hand, the grapes are left to ‘bleed’ for 4 hours, resulting in a gorgeous, pale, slightly cloudy, pink hue. The natural fermentation starts in tank and continues in the bottle with the aid of wild microflora. This lively bubbly is bright and exuberant with a fruity and yeasty bouquet followed by wild strawberry, raspberry and pink grapefruit flavors plus a dash of bitters on the crisp, clean, bone dry finish. Enjoy it chilled with artisanal cheese and charcuterie or stronger seafood dishes like mackerel or mussels.
