CloseToby, from Shakespeare’s home town of Stratford-upon-Avon, drove a tractor on Julie’s parents' farm in Protection, Kansas, and left with the farmer’s daughter. They moved to France, where he worked and studied under the legendary René Mosse before launching their own winery in 2012. Cuvée Crush is made from Grolleau grown in iron- and calcium-rich, sandy soils. The grapes are hand-picked and de-stemmed before undergoing a three-day maceration. The juice is direct-pressed into fiberglass/stainless steel tanks and ages for 6 months. They use recycled Champagne bottles and thus crown caps for all their wines. Unsuprisingly, Crush is a totally crushable, chillable light-bodied red that's juicy and puckery with notes of cranberry, rhubarb, and strawberry with crisp acidity and mild tannins. We recommend pairing this with and elevated charcuterie board, preferably featuring Pâté en Croûte, or a roast beef sandwich with horseradish mayo and arugula on Ciabatta.
