Close4th generation winemaker, Juan Jesus was a professor of viticulture and enology at Ciclo Superior de Vitivincultura while overseeing Bodegas Vinatigo. The winemaking was then passed down to his son, Jorge Mendez, who made conversion to organic and biodynamic farming a priority. This cuvée is comprised of 100% Listan Blanco (aka Palomino) grown on 100-year-old vines in volcanic soils. It’s harvested by hand by barefoot pickers and undergoes two triages: first in the fields and again in the winery. Fermented in stainless steel tank with indigenous yeast and aged on the fine lees, this medium-bodied, crisp, floral white has balanced acidity, a note of lime, a waxy texture, distinct salinity and a bitter almond note on the finish. Pairs perfectly with oysters and raw shellfish, fried seafood, or an arugula and radicchio salad with marcona almonds and green olives.
