CloseJohn and Jane Okruashvili produce this lean, crisp, 100% Rkatsiteli from their organic and biodynamically-farmed, high elevation vineyards in the Kakheti region of Eastern Georgia. Zvari, which translates to 'edge' is literally their highest elevation viable vineyard site, beyond which would be too cold to grow grapes. It's macerated in stainless steel, not Qvevri, for just two weeks, which contributes to its precision and freshness. Notes of tea, citrus peel, and sandalwood spice unfold in this graceful, gateway light-to-medium-bodied orange wine with gentle, drying tannins on the finish. Pairs perfectly with Nigvziani Badrijani, a local fried Eggplant and with spiced Walnut paste dish, or an array of Tagines and Curries.
