From 45 year old vines that are organically farmed on sand, limestone, and gravel soils, the bunches are destemmed, pressed, and macerated on the skins for 15 days before native yeast fermentation then aged in concrete for eight months. The result is a medium-bodied, compelling red with vibrant dark berry and cassis notes, firm tannins and balanced acidity. This would pair nicely with Veal Saltimbocca or roasted portobello mushrooms with chevre and olives.
