This Trousseau Gris is a stunning, savory and dare we say damn good looking coral-hued, white wine. It comes from organic, dry farmed 50+ year old vines. that are harvested by hand and foot stomped. The bunches are left to macerate on the skins for 3 days before a spontaneous fermentation in neutral puncheons and stainless steel. The wine then rests in puncheon or is transferred to neutral barrique to mature for an additional six months before bottling with no fining or filtration and minimal sulfur. Beautiful aromas of nectarine and melon lead to flavors of peach, honeydew, white tea, and jasmine with balanced acidity and a textured mouthfeel. Serve with medium strength soft cheeses like Morbier or let this transport you to the Jura by pairing it with an haute cuisine delicacy like roast partridge with shallots.
