The legendary Salvo Foti crafts this 100% Carricante from certified organic vines grown on sandy and volcanic soils on the cooler, drier, northern slopes of Mount Etna. He employs the traditional, labor-intensive Alberello bush training system that requires lots of skill and experience but no trellising, to protect the bunches from excessive heat and sunlight. Harvested by hand, the grapes are directly pressed using a soft press with a maximum pressure of 1 bar. Fermentation lasts 10-12 days followed by élevage for 6 months in temperature controlled stainless steel tank. The result is a stunning, medium-bodied, savory white with floral aromatics, ripe stone fruit flavors, elevated acidity and pronounced minerality with a hint of salinity.
