Nestled on the high-desert plateau of La Mancha, Bodegas Parra Jiménez is renowned for its production of wines, crafted from a blend of native and international grape varieties grown in certified organic and biodynamic vineyards. In 2004, they built a new winery on the estate creating a biodynamic, self-sustaining ecosystem with biodiversify, livestock and other crops like garlic, grains, peas, and lentils. Today, the estate boasts Sohiscert organic and Demeter biodynamic certifications and also produces organic garlic and Manchego cheese. Gulp Hablo Fresco, a coferment of 50% Garnacha and 15% Syrah with 35% Verdejo, Airén, and Macabeo, is a fresh, clean, light bodied red with crisp acidity, wild berry and stonefruit flavors with low tannins.
