CloseLa Pépie is a classic Muscadet (aka Melon de Bourgogne) sur Lie by Domaine de la Pépière, located just southwest of Nantes in the Loire-Atlantique. Hand harvested from various organically-farmed plots with predominantly granitic soils, the grapes are direct pressed and settle for 12 hours prior to a fermentation with native yeast in stainless steel tank. Sur Lie aging takes place in underground glass lined vats until the following spring. The result is a dry, restrained, light bodied white with subtle lemon and stone fruit flavors, balanced acidity and pronounced minerality. The time spent on its lees adds some fermentation flavors, a biscuity note and just a tiny bit of effervescence. This unique, lively wine is the quintessential pairing for a seafood tower with oysters on the half shell but also goes great with a goat cheese and tomato quiche or savory crêpes from Brittany, just to the north.
