CloseBojo do Luar began as a collaboration between Savio Soares, a prominent wine importer, and Fernando Paiva and Antonio Sousa, two pioneers of biodynamic, low intervention winemaking focused on lesser known, indigenous varietals from Northern Portugal. A few years ago they removed the training wheels, so to speak, leaving Savio in charge of the entire operation from the vineyards to the cellar. Luar Rosa is a vibrant, mouthwatering blend of 80% Azal (white) and 20% Espadeiro (red) from 30+ year old vines planted on granite soils. Hand-harvested and destemmed, the bunches began to ferment semi-carbonically over a 12 day cool maceration in large amphora called talhas before being pressed and returned to the talhas to finish fermentation and full malo. At this stage, ground chestnut flower is added, acting as a natural alternative to sulfites. The result is a fresh, tart, and slightly sour rosé with floral aromas and notes of grapefruit, white peach, green tea, and crisp acidity. A lovely pairing with Camarão Alhinho - garlic and red pepper shrimp - or Arroz de Tomate - sauteed tomatoes in rice.
