Arbois is considered to be among France's most ancient wine region and Domaine Rijckaert is steeped in its history. His Savagnin is made from organically farmed 30-45 year old vines rooted in grey and blue iridescent marl. The thick skinned grapes are hand harvested to preserve the full integrity of each and every grape which then undergo a long, gentle pressing into neutral oak where it ferments naturally on the lees with full malo before aging in neutral oak for up to 15 months. This produces a bright, clean lemon yellow wine with aromas of fresh Meyer lemon, orchard fruit, and minerally earth that opens up to flavors of textbook Jura-esque candied lemon rind, white flowers, ginger, with racy acidity, salivating salinity, and stony minerality. Pairs beautifully with freshly shucked oysters or Jura’s favorite cheese, Comté.
