Tarbissana is made from 100% Palomino Fino, the grape used in virtually all Fino Sherry, but without fortification, thus the modest abv of 11.5%. The vines, averaging 35 years old, are from parcels across the estate’s 4 hectares on lustrillo Albariza soils that have been farmed organically since the 1990's though they didn't start making their own wine until the 2022 vintage. Harvested by hand and direct pressed into 80% stainless steel tank and 20% into old bota the juice is fermented with native yeast and without temperature control, then rests in the same vessels for an additional 8 months before bottling without fining or filtration. Despite the lack of fortification, it has a the distinct saline, orange peel, nutty and tangy notes that are a hallmark of Fino Sherries. Medium-bodied with moderate acidity, this stunning, unique wine pairs well with hard, aged cheeses, anchovies, olives and pata negra, the dry-cured ham that comes from pure-bred black Iberian pigs that roam freely in oak forests and spend their final months on a strict diet of acorns (bellotas).
