Tuets Tots Negre is a vibrant 50/50 blend of Ull de Llebre (aka Tempranilllo) and Syrah from organically farmed vineyards in Catalonia. By fostering biodiversity surrounding the vineyard, they obtain high quality fruit, the cornerstone for crafting great wines. Half of the grapes are kept as whole cluster with stems removed, and the other half is directly pressed. Everything is combined in the same tank for 7 days where it undergoes spontaneous fermentation with native yeast and then pressed into stainless tanks where the wine rests for 9 months. The result is a grippy, medium-bodied red with moderate tannins that can still take a slight chill. Fresh, wild blackberry, a bit of barnyard and a hint of violet, this lively red pairs well with paella, lamb burgers or a hard, sheep’s milk cheese.
