CloseVolpolo follows a long line of powerful wines collectively known as Super Tuscans that introduced classic French varietals to the coastal areas around Bolgheri in the late 1960's. It's a blend of 70% Cabernet Sauvignon, 15% Merlot and 15% Petit Verdot. Farmed organically and harvested and sorted by hand, the grapes are macerated for three weeks before fermentation with indigenous yeast in stainless steel. Malo takes place in French oak, both barriques and tonneaux, where the wine rests for about 14 months before the final blends are assembled and bottled. The result is an enticing combination of black currant, cherry, violet, cedar and cigar box flavors in an intense, structured red, which benefits from aging or decanting to resolve the firm, dry, youthful tannins. Pairs perfectly with a seared venison tenderloin, braised short ribs, or a hearty Bolognese ragù.
