Named after the Roman god that blew gentle breezes in a turbulent region known for the giant waves around Nazaré and Peniche, Favonius is the muse behind this Portuguese passion project. Their Vinho Tinto is made from 100% Touriga Nacional from Alcobaça, on chalky-clay soil just 11km east of Nazaré. Harvested by hand, the grapes are cold soaked for 10 days for enhanced extraction of color and flavor then fermented with wild yeast in stainless steel vats. After two days, the juice is drained and fermentation is completed without the skins, tempering the tannins. The result is a fresh, balanced, vibrant, red with fresh blackberry flavors, moderate tannins and acidity with herbaceous. Just on the cusp of being chillable, it can go either way and pairs beautifully alongside a spicy Portuguese Chouriço, of a garlicky Bifana pork sandwich.
