The Chiroubles plot comes from granite rich soils planted with 50+ year old vines. Natural fermentation takes place in cement vats using semi-carbonic maceration followed by aging in very old, neutral foudres. This all culminates in a rustic, medium-bodied red brimming with juicy, black fruit, earthy tannins, crisp acidity, and a pleasant savory finish. Pair this textbook Beaujolais with Thai-style veal Blanquette, Andouillette, or roast butternut squash.
