CloseSRC is an acronym for the family behind this prestigious winery in Mt. Etna, Sicily. Sandra, Rori, and Cinzia are a father, mother, daughter team with Rori being the lead vigneron. Their vineyards range from 650m to 1000m above sea level all over the North slopes of Mt. Etna with vines ranging from 50 to 120 years old. This red blend of about 80% Nerello Mascalese and 20% Grenache rooted in volcanic soils is hand harvested before being co-macerated and co-fermented for about 3 weeks in stainless steel before seeing elevage in steel tanks and tonneau for about 8-10 months. They are then bottled unfined, unfiltered with less than 10ppm of sulfur for stability before they are set to rest in bottle for a year before release. The result is a gorgeous garnet hued wine with medium body and tannins, bright acidity, and aromas of wild barnyard and ripe red fruit enveloped in flavors of black cherry, strawberry, raspberry, plum, leather, and a lovely, earthy minerality. Pairs delectably with Sicilian eggplant parmesan or any type of Arancini.
