Tedorigawa produces sakes that are big on flavor while maintaining a light elegance and finesse. The brewery uses Kanazawa Yeast, which has a mild aroma profile with low acidity, in conjunction with the yamahai brewing method, in which no lactic acid is added, to produce a rich and complex sake that remains round and balanced. Tingly grapefruit acidity and tropical fruit greet you at first sip in this Junmai sake, which follows with a lush, velvety texture and clean finish. Serve as an accompaniment to mezzo, or general Mediterranean cuisine.
