Made from Mongoku rice with a 55% polishing ratio, Sohomare Indigo is a dry, pure, elegant sake made in the traditional and labor-intensive Kimoto method. It has an incredibly enticing nose of white flowers and some robust fermentation aromas followed by ripe stone fruit and pure, rice-driven flavors on the palate. Pairs best with white fish sashimi, scallop ceviche and halibut, but also with soba noodles and, surprisingly, artichokes.
