Gaston Chiquet, founded in 1746, was a pioneer of the grower/producer movement - vinifying and bottling their Estate fruit since 1919. Certified sustainable, harvested by hand and gently pressed with a standard dosage for a Brut of 8g/l, the Blanc de Blancs d’Ay is 100% Grand Cru Chardonnay in an area that’s better known for it’s red grapes. Ay’s limestone and clay soils provide amazing minerality while the 3 years it sepnds on its lees contributes a beautiful biscuity, brioche note. Fine bubbles and crisp acidity with subtle white flower aromas are followed by an exquisite palate of white peach and citrus flavors. Great for special events, particularly in Magnum size, it pairs wonderfully with scallops, sashimi or fresh berries topped with creme fraiche!
