This 100% Carignan pet-nat comes from 70-year old, biodynamically farmed vines. The winery, operated by seasoned winemaker Magali Terrier, is home to two donkeys, who wander amongst the vines, eating the weeds and garrigue that grows on the property. Named in honor of these assistant winemakers, whose pruning sometimes includes eating the shoots and canes of sprouting grapes, this pet-nat is highly expressive, with notes of sun-ripened red berries, wild herbs, and a punch of barnardy funk on the finish. Chock full of fizz and fine froth, open this one over a sink, or many eager glasses, and enjoy as an aperitif!
