This iconic Rose Champagne is the benchmark against which all others are measured. The pale-salmon hue with silvery inflections gives way to captivating aromas of white cherry and lily. On the palate, it’s fresh and lively with enticing yet subtle wild berry flavors, crisp acidity, limestone and granitic minerality as well as a long, lovely finish with fine persistent, nose-tickling bubbles. Made from a blend of 40% Chardonnay, 30% Pinot Meunier and 30% Pinot Noir which is vinified as a red thus adding a touch of tannin and texture. Vinification takes place in stainless steel, the dosage is a moderate 9 grams per liter which amplifies the fruit a touch, and it spends 36 months onthe lees prior to disgorgement. This gem pairs wonderfully with delicate fish like poached wild salmon, classic sushi or an array of desserts from lemon meringue to three berry tart to chocolate mousse!
