Clouet's Brut Nature comes exclusively from Grand Cru, family-owned vineyards in and around the village of Bouzy in the Montagne de Reims, which is known for its red grapes, especially Pinot Noir. This blend of 60% Pinot Meunier, 20% Pinot Noir and 20% Chardonnay is somewhat atypical in that they elevate Pinot Meunier above Pinot Noir and then bottle it bone dry with no dosage at all. 80% of the wine is fermented in stainless steel with the balance in old Sauternes casks. However, 50% of this cuvee comes from a 10 year old solera so the new wines can learn from the older ones. Once the wine is bottled, it rests in bottle for 4 years in the cellars under the family's 17th century home, prior to disgorgement. The result is a crisp, clean, complex Champagne with extremely fine, persistent bubbles, pronounced minerality, subtle tart berry notes and a hint of toasty brioche. Pair with escargot, oysters or littlenecks on the halfshell!
