Matthieu Barret, a bear of a man with massive hands and a deft touch, makes this stunning Syrah in accordance with biodynamic farming practices that he instituted back in 2001. Harvested before peak ripeness to temper the alcohol and body, the vines are then destemmed and fermented naturally in concrete tanks to emphasize the purity of his fruit. Think ripe plum and blackberry, followed by an herbaceous thyme note and a hint of black pepper with just enough of a ’sauvage’ element to be true to Syrah. This medium-bodied red with a silky approach yet firm underlying tannins is Matthieu’s baby bear. Pair with lamb burgers or an aged salty cheese like Beaufort or Tomme de Savoie.
