Made in an ancient style, Kiku Masamune Taru is made from Japanese rice polished down to 73% and aged in new Yoshino cedar casks imparting a pungent, spice note onto an otherwise clean, dry, pure sake. This is a throwback to the Edo period during which sake was commonly stored and transported in large cedar barrels as opposed to modern sake which is typically fermented and aged in stainless steel tanks.
