2020 Cingilia di Fabio Di Donato Pecorino Colline Pescaresi - Abruzzo, Italy (750ml) - $20
Grown on fossil-rich clay soils, the 10+ year old Pecorino vines are tended organically, hand-harvested, and wild-yeast fermented in stainless steel to maintain the freshness of the wine. After 8-10 months on their lees, the wine is bottled unfined, unfiltered and barely sulfured. It presents bright and dry, a touch briney with notes of lemon, acacia, jasmine, and hints of straw, with a gorgeous mouthfeel and long finish. Pair with brown Trout prepared En Papillote, Al Cartoccio in Italian, folded in a parcel and baked, alongside lemon zested grilled asparagus.
2021 Filipa Pato Dinamica Bical & Arinto Branco - Bairrada, Portugal (750ml) - $22.50
Filipa Pato is a chemical engineer who got her start in winemaking working harvests in Bordeaux, and has been making natural wines in Bairrada with her Belgian Sommelier husband William Wouters since 2001. Dinamica is a blend of 80% Bical and 20% Arinto, grown Biodynamically and fermented in stainless steel tanks and large wooden casks, and aged for 5-6 months before bottling. It has aromas of pear and thyme followed by a creamy medium body with notes of white stone fruit and lemon, and a dry mineral finish. Pairs well with Marcona almonds and manchego, or Sardinhas Assadas, Portuguese style grilled Sardines served with sauteed vegetables and bread.

Lean and light, this pinot noir from Heaps Good Wine Company, run by Marija Gee and her New Zealand born husband Nick Gee in the green hills of the Stajerska region of Slovenia, is a great pick for those looking for a more natural, slightly funky pinot. A palate of ripe red cherries and plum are met with earthiness, a wisp of smoke, and a touch of a sour note. Drink with yakisoba or flatbread topped with blue cheese, beets, and rosemary.
2020 Curii Uvas y Vinos Alicante Una Noche y Un Dia - Valencia, Spain (750ml) - $23
Curii Uvas y Vinos is the winemaking project of Violeta Gutiérrez de la Vega and her partner Alberto Redrado, sommelier from the highly regarded l'Escaleta restaurant in Cocentaina. The couple aims to restore old parcels around Alicante to grow romantic Mediterranean wines organically and with minimal intervention. Una Noche y Un Día is made from 100% Giró, a clone of Garnacha local to Alicante, that’s partially destemmed and foot-trodden in open vats with native yeast fermentation. Fresh and vibrant, it has aromas of citrus flowers, anise, and plum, on the palate it’s dry with a medium body and notes of spice and red fruits. Enjoy this day or night alongside traditional Paella, or braised lemon saffron chicken and potatoes.
