2023 Celler La Salada Roig Boig Ancestral Brut Nature - Catalonia, Spain (750ml) - $30
A veteran winemaker from the Catalonia region, Toni Carbó started Celler La Salada with his best friend and business partner Ramón Jané in 2012, after his much acclaimed Mas Candí project. Made from a field blend of 8 red and white native varieties including Sumoll, Roigenc, and Cannonau, that are all farmed biodynamically with zero sulfites added throughout the entire winemaking process. 90% of the grapes go through direct press while the remaining 10% are macerated for 4 months with no extraction to limit the color and tannin. The result is a grippy pet-nat that takes on a slightly tannic structure with a generous nose of wild rose, juicy raspberry, and strawberry. The layered palate displays ripe red fruit, dried mushroom, and chalk, all elevated by refreshing acidity. Pairs well with pomegranate glazed duck breast, Neapolitan pizza, or pork tenderloin with cranberry sauce.

2023 Badia di Morrona Toscana Felciaio Vermentino - Tuscany, Italy (750ml) - $22.5
Badia di Morrona’s Vermentino is planted on predominantly clay soil vineyards near the Tuscan coast, just south of Pisa. Harvested by hand, the grapes are fermented and aged in stainless steel tank to accentuate the delicate aromas of white peach, lemon zest and gooseberry. The palate is crisp and clean with balanced acidity and a saline note on the finish. An extremely versatile, crowd-pleasing, all-season white, Felciaio is great as an aperitivo or even as a palate cleanser between courses, but it pairs particularly well with Shrimp Scampi and pretty much any hearty seafood dish.

2022 Szent Donat Tufa - Transdanubia, Hungary (750ml) - $27.5
Tamás Kovács' family has been making wine on the northern shores of Lake Balaton in western Hungary for more than five generations and working organically with minimal intervention since 2011. Tufa is a medium-bodied, well-structured blend of 50% Kékfrankos (Blaufrankisch), 25% Cab Franc, and 25% Cabernet that’s grown on ancient black basalt soil on the tiny volcanic Tihany Peninsula. It’s fermented and pressed after 3-7 days of maceration, then aged for 10 months in a mix of stainless steel tanks, old Hungarian oak barrels, and ceramic eggs. It’s a lively wine with notes of bing cherry, blackberry, raspberry coulis, and chocolate as well as an herbaceous profile and a hint of black pepper on the firm, dry finish. Enjoy with garlicky, cheesy, stuffed peppers with ground beef and rice or goulash, Hungary’s legendary meat and potato stew with carrots, peppers and paprika!

2021 La Grange du Nord Gare du Nord - Rhone Valley, France (750ml) - $22
This Grenache dominant blend with 30% Cinsault and 10% Syrah from La Grange du Nord is a satisfying and substantial red with a bit more acid than expected, providing beautiful balance and structure. All farming is done organically and harvesting is done by hand. The Cinsault and some of the Grenache is direct pressed for freshness and purity while the balance of the Grenache and the Syrah macerates for 5 days on the skins for extraction, flavor, body and tannin. Unfiltered with no added sulfites, Gare du Nord displays aromas and flavors of raspberry and cassis with notes of jasmine, leather, mushroom followed by a hint of forest floor woodsiness. It’s a fantastic pairing for a vegan chili or Toulousain cassoulet with white beans and mutton.
