2021 Kobal Bajta Blaufränkisch Pet Nat Rose - Podravje, Slovenia (750ml) - $22
Kobal Bajta is a wild, unique and refreshing ‘pét-nat’ made from Blaufränkisch, an indigenous Eastern European varietal. The grapes are dry-farmed on the steep, wind-swept slopes of Sajerska, hand picked and left to ‘bleed’ for 4 hours, resulting in a gorgeous, pale pink hue. The natural fermentation starts in tank and continues in the bottle with the aid of wild microflora. This lively, raw, juicy bubbly looks cloudy, but it’s bright on the inside with a yeasty bouquet and notes of wild strawberry, raspberry and pink grapefruit with a dash of bitters. Enjoy it chilled with artisanal cheese and charcuterie or stronger seafood dishes like mackerel or mussels.

2020 Jean Vullien Roussette de Savoie - Savoie, France (750ml) - $22
Jean Vullien and his wife Jeannine, with the later addition of their sons David and Oliver, have farmed land at the foothills of the Alps, nestled between Chambery and Albertville (the host of the 1992 Winter Olympics, if you recall) since 1973. Made from 100% Altesse grapes, the alpine climate gives this wine a signature racy acidity and pronounced minerality. Medium-bodied with bright stone fruit flavors, a dry finish, and lovely flavors of hazelnut, almond, and lemon peel. Works beautifully as an aperitif, or as a compliment to escargot with garlic butter.

2020 Fuso Cala Dario Serrentino Terre Siciliane Rosso - Sicily, Italy (750ml) - $21
Fuso is a wine project from the Italian importer PortoVino that seeks to bottle wines with locally-sourced, organically-farmed, small vineyard-grown grapes. It is a project driven by farmers, that is as much a learning endeavor for those involved as it is a means to create delicious wines. This bottling is from vintner Dario Serrentino, who bottles his own line of wines out of his vineyard in the corner of Sicily. It is a juicy and funky co-ferment of 90% Nero d’Avola and 10% Grillo, a local white grape. The grapes are macerated on the skins for 6 days, then fermented on the lees for 6 months before undergoing malolactic fermentation. The result is a wine with a wild tinge that maintains a medium-light body. Notes of red berries, dried flowers, and a hint of muskiness. Pair with sunshine and antipasto.

2020 Day Wines Vin de Days Rouge - Willamette Valley, OR (750ml) - $30
Days Wines was founded and is operated by woman-winemaker Brianne Day in Oregon's Willamette Valley. The 2020 Rouge is a blend of 71% Pinot Noir, 16% Pinot Meunier, and 13% Pinot Gris which, having undergone partial carbonic maceration, results in a more vibrant, bright red fruit profile, with softer and more supple tannins. Expect aromas of tart cherry and raspberry accompanied by a perfumed violet note. On the palate the wine is well-balanced with high, persistent acidity, and racy red fruits silhouetting the flavor profile. Easily drinkable and approachable, pair this wine with pork roast, chicken breast with rosemary and thyme, or salmon with roasted shiitake mushrooms.
