The name derives from an English law in 1751 that was enacted to keep "demon" gin out of the hands of the poor. It's salmon color comes from the extra botanicals added during maceration to balance the juniper notes. The result is a floral gin with sweet citrus notes. Great with tonic or in a Gimlet.
