Winemaker Aleš Svatoš is a chemist by training, and founded the winery in 2010 with no background in wine, just a belief that his understanding of the science would guide him. In time, with the help of his wife Simona and son Jonas, Svatoš’ learned to combine art with science to make some incredibly fun and delicious wines from the steep hills above the Elbe River in the Velké Žernoseky region of northern Bohemia. This unfined, unfiltered native yeast fermented Pinot Noir was macerated on its skins for about a month, and then aged two years in neutral oak. It is lighter-bodied, grippy and earthy, but given time to breathe, it reveals lovely bright red cherry flavors alongsidesome black olive, briny notes. Perfect with Knedlíky (Czech potato or wheat dumplings) and cabbage with either roast chicken, braised ham or wild hare!
