Calcarius is an avant-garde natural wine project from Valentina Passalacqua that focuses on the Kimmeridgian limestone soils of her childhood town, Arpicena, at the feet of the Gargano mountains in Puglia. Made from 100% Bombino Bianco, the grapes are hand-harvested, destemmed and fermented traditionally in stainless steel tanks, in contact with the skins for about 5 days with indigenous yeast. This white is crisp, light-bodied and refreshing with subtle floral aromas, stone fruit and kefir lime flavors with a dash of bitters on the finish. Pairs wonderfully with classic Pugliese cuisine like Orecchiette with broccoli rabe and garlic or Baccala al la Salentina, their special version of salted cod.

A lovely blend of 72% Carignan, 20% Valdiguié, 8% Syrah from Mendocino, Solano County and the Green Valley, that’s harvested early to highlight the fruit and preserve the acidity. The Carignan delivers the blue fruit in the wine while the Valdiguié brings out the brightness and lifting acidity and the Syrah holds it together, adding depth and structure. The Solano County Green Valley vineyards practice non-certified organic farming. The Mendocino vineyards are both dry farmed and practice certified organic farming. Like love, this medium bodied red with wild red berry flavors is a wild ride! Enjoy with anything from burgers to pasta with red sauce to a strong, stinky cheese!
